The right kind of carbohydrates can make an important contribution to our health. Why?
We are fooled into believing that any low-fat diet is automatically a healthy diet. It is not. Despite eating less fat in some societies, heart diseases and strokes are still the major killers. We avoid fat because of its high energy content and propensity to be overeaten, only to replace it by high quantities of fast-release carbohydrates that have the same fattening properties.
Most of us typically get 15% of our calories from protein, and if we are to restrict fat to 30%, then 50-55% will come from carbohydrates. If we do not eat the right type of carbohydrates, this can cause many health problems such as obesity, heart disease, syndrome X and diabetes.
